The word Criolla refers to a person or thing of Spanish-descent, born or developed in the Americas. For our purposes, the things are Criolla grapes, a family of grape varieties indigenous to South America. No, this isn’t a class about Pais—about 150 varieties of Criolla have been identified (so far) and we’re going to taste 3: Quebranta, Criolla Grande and Pedro Giménez.
